Instructions

  1. Preheat oven to 350 degrees.
  2. Put 1 tablespoon olive oil in a cast iron skillet.
  3. Salt & pepper pork chops to taste.
  4. Add pork chops to skillet and brown on each side over medium-high heat.
  5. In a small bowl, mix jam, vinegar, mustard, berries and fresh thyme; stir until combined.
  6. Pour mixture over pork chops and heat over medium heat for about 3-5 minutes.
  7. Place skillet in preheated oven.
  8. Finish cooking for 10-15 minutes..
