• 1-16 oz package linguine
  • 1 jar Bella Sun Luci - Bruschetta Sun Dried Tomato
  • 1 cup walnuts, toasted and chopped
  • 3 cloves garlic, minced
  • 1 cup half and half
  • 3/4 cup Parmesan cheese, grated

Do you have those day’s when going home from work and having to cook supper seems like an impossible task?  Keep these ingredients on hand and you can have this prepared in about 25 minutes.  Add a salad  and bread and you have a terrific meal for your family.


Prepare linguine according to package directions.

Heat walnuts in a nonstick skillet over medium-low heat, stirring often, 5 minutes or until toasted and fragrant.  Remove nuts from skillet, cool and chop.

Increase heat to medium, and saute garlic cloves in 2 Tbsps of olive oil to skillet for 1 minute or until garlic is fragrant.

Add Bruschetta, half and half, walnuts, and 1/2 cup Parmesan cheese.  Stir, cook until heated through.

Remove from heat and toss with linguine.  If mixture becomes too thick, add pasta water to thin.

Garnish with additional Parmesan cheese.

Note:   I try to keep several different nuts and evaporated milk in my pantry at all times so if I find myself without half and half or walnuts, I can substitute and prepare this dish at any time.  This is one of our “Meatless Monday” meals.   If you can’t find the Bella Sun Luci brand in your market, you can order on line.
