• 2 cups sugar
  • 2 cups self rising flour
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1 cup cooking oil
  • 3 eggs
  • 2 small jars plum baby food
  • 1 cup pecans; chopped

Elizabeth Gates was one of my mother’s best friends and I have many recipe’s in my collection from her.  Remembering back, I think that my mom and her where always in a fun competition with cooking and sewing.  They really enjoyed baking and baked cakes every Friday.   Gates as we called her, her husband Hannis, and my parents played a very competitive game of dominoes every weekend.   I can hear them now laughing and bragging to each other, always playing the girls against the boys……

Directions:

  1. By hand, mix together sugar, flour, cinnamon and cloves.
  2. Add cooking oil, eggs, plum baby food and pecans; blend together.
  3. Grease and flour a tube pan.
  4. Pour mixture into pan.
  5. Bake 350 degrees for 50 minutes.

Note:  I usually bake in small loaf pans  at 350 degrees for 25 minutes or until done.
