• 1 3/4 all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 1 egg, slightly beaten
  • 1 teaspoon vanilla extract
  • 2-3 medium bananas, mashed
  • 4 tablespoons milk
  • 4 tablespoons maple syrup
  • 3/4 cup chopped walnuts or nuts of your choice

This recipe is a quick easy way to get rid of those overripe bananas and get the reward of a tasty muffin.  I adapted this recipe from one of my favorite cookbooks Mad About Muffins by Dot Vartan.  I used her New England Banana Muffin recipe and added 1 cup of chopped walnuts.  I love muffins that have the addition of nuts and usually add them to most muffin recipe’s.

Directions:

  1. Heat oven to 375 degrees.
  2. Add flour, baking soda, and baking powder to a medium bowl and stir well with a whisk.
  3. Mix in the sugar.
  4. With a fork combine the melted butter, beaten egg, vanilla extract, bananas, milk, and maple syrup in a large mixing bowl.
  5. Add the flour mixture and chopped nuts to the banana mixture, Stir just until blended and all dry ingredients are moistened.
  6. Scoop the batter with a 1/4 cup ice cream scoop and place the batter into greased muffin tins or muffin tins lined with cupcake liners.
  7. Bake 20 minutes or until the muffins are lightly brown.
  8. Enjoy!
